Our Founder's Path

From Foraging to Studio

Lynette DeRosa, inspired by the rich biodiversity of the Sierra Nevada foothills, began her journey with a deep respect for natural processes. Her early explorations focused on the unique raw wildflower honey found along Skyway, observing its distinct character.

This appreciation for unfiltered purity led to the establishment of Honey & Hazel, LLC. The studio, located in Paradise, California, is a testament to traditional agricultural methods and a commitment to zero-additive production, honoring the land and its bounty.

We partner with regional California beekeepers who sustainably harvest raw wildflower honey from diverse foothill flora, ensuring ecological balance.

Our premium hazelnuts are gently sun-dried to preserve their natural oils and robust flavor, a crucial step before roasting.

Using traditional copper kettles, we slow-roast our hazelnuts to perfection, coaxing out deep, complex notes without rushing the process.

Each product is carefully bottled by hand in our Skyway studio, ensuring the unfiltered purity and artisanal quality reaches your pantry.
